Simplified individual lasagna
I propose a simplified recipe for traditional Italian lasagna, which is made in individual portions - it is very convenient to cook and serve for both dinner and as a festive dish.

Directions
Prepare all the ingredients necessary for cooking lasagna.
Peel and finely chop the onion. Pour water into a large pot, add salt, and bring to a boil over high heat.
Heat vegetable oil in a skillet, add the onion and sauté it over medium heat until golden brown.
Add minced meat to the pan with fried onions. Carefully chop the minced meat into small pieces and fry it over medium heat for 5 minutes until it turns a uniform color.
Add diced tomatoes to the pan with the meat. Add sugar to neutralize the acidity of the tomatoes. Season with pepper and salt, mix well, cover with a lid, bring to a boil, and simmer over medium heat for another 5 minutes.
Prepare the cheese sauce: put flour in a saucepan and, stirring constantly, lightly fry it over high heat until it turns a light creamy color.
Carefully pour in the milk while constantly stirring. If lumps appear, they can be eliminated with a blender by carefully grinding the mixture. Bring the sauce to a boil and cook for 3-4 minutes until it thickens.
Grate the cheese finely.
In the finished sauce, add half of the specified amount of cheese and stir until the cheese dissolves. Season the sauce with salt and pepper to taste. It is preferable to salt the sauce after adding the cheese, as the cheese will give the sauce a certain piquancy and may already be salty. Alternatively, you can prepare a traditional Bechamel sauce instead of cheese sauce according to the recipe.
Place the lasagna dough sheets in boiling water and cook them until they are al dente according to the time indicated on the packaging.
Assemble the lasagna: spread cheese sauce on the middle of the lasagna sheet. Crosswise, place a second sheet of dough on top.
In the middle of the resulting cross, place the meat filling and sprinkle it with cheese.
Cover the meat filling first with one sheet of dough, then with another, spreading cheese sauce between them.
Generously coat the top of the resulting 'envelope' with cheese sauce and sprinkle with cheese.
In the same way, roll up the remaining portions of lasagna. Carefully place them in a baking dish next to each other. Pour water on the bottom of the dish so that it covers the bottom of the lasagna by about 1.5-2 cm. Bake the lasagna in a preheated oven at 180° for 45-50 minutes until golden brown.
Garnish the cooked lasagna with herbs and serve.
