Directions
To make pasta nests with meatballs and pumpkin, we will need these kind of pasta - tagliatelle, rolled into nests. They can be regular or, as in this case, with spinach, which will give the dish an interesting and vibrant color.
You can take any kind of minced meat - beef, chicken, or in my case, pork minced meat. I suggest cooking meatballs with the addition of bright and healthy pumpkin. Besides its nutritional value, this vegetable will add juiciness to any type of minced meat.
Peel the pumpkin and grate it with a large grater. Then mix the minced meat with finely chopped (or grated) garlic and onion, grated pumpkin, and your favorite spices - at least salt and black pepper.
Divide the minced meat into equal portions according to the number of pasta nests you have. Then, place the prepared meatballs into the nests.
Now, let's prepare the sauce. Peel and finely chop the onion and garlic clove. Prepare the rest of the ingredients so that everything is within reach - the sauce cooks quite quickly.
Heat vegetable oil in a pan and first sauté the finely chopped onion until softened. Then, add the garlic and after about half a minute, add the flour. Keep stirring constantly and cook for about a minute.
Immediately pour in the cream and add a teaspoon of mustard. You can also add other favorite spices. Mix everything well.
Pour this sauce into the mold in which you will be cooking. Place stuffed pasta nests on top of the sauce.
Pour broth into the mold so that it is level with the top of the pasta. You can also pour in boiling water, but then you need to add salt. Place the mold in the oven, preheated to 180 degrees, for 25 minutes.
During this time, the pasta will almost cook and become soft.
Remove the mold from the oven and sprinkle grated cheese on each nest. Put it back in the oven for another 15 minutes, let the cheese melt and become golden brown.
Do not rush to serve the dish immediately after it is cooked - let it rest for another 10 minutes. During this time, the pasta will have time to absorb all the sauce.
Now you can serve our pasta nests with meatballs and pumpkin, sprinkled with fresh herbs, such as dill. Enjoy your meal!
