Prepare all the ingredients for fluffy pancakes with apples in kefir. I used very small eggs, about 50 grams each, so I added three. If you have eggs of normal size, about 65-67 grams, then two will be enough. The apple is quite large and has a sour-sweet taste. Be sure to add salt, a good pinch of it. It enhances the taste of the pancakes, contrasting with the sugar. Speaking of sugar. Here, it all depends on your personal taste. After all, if you serve them with jam, you don't want the pancakes to be too sweet. I used 40 grams of sugar, which is approximately 2 tablespoons. I really like to make pancakes with clarified butter. But if you don't have any, you can replace it with a couple of tablespoons of regular vegetable oil. If you want to use regular butter, it's better to mix it with vegetable oil so that it doesn't burn too much. Vanilla is optional, but it gives the pancakes a very pleasant scent. You can use either vanilla paste or vanilla sugar.
Thinly peel the apple, remove the core, and cut it into small cubes. For the sake of experimentation and to save time, I once didn't peel the skin hoping that it wouldn't be noticeable. Unfortunately, it is quite noticeable in the pancakes after baking, so it is necessary to remove it.
To make dough for fluffy apple pancakes with kefir, take a bowl, crack eggs into it, add salt and sugar.
Slightly warm up the kefir in the microwave until it reaches a slightly warm state. In my opinion, pancakes turn out slightly fluffier with warm kefir. Pour warm kefir into the eggs and mix well using a whisk or a spoon. No need to beat, just mix until smooth.
Add sifted wheat flour with a raising agent to the bowl with the kefir-egg mixture. I sift it using a regular sieve.
Mix the dough, add vanilla and diced apple. If you decide to grate the apple, it might release more juice, so you will need to add an extra spoonful of flour to prevent the dough from being too liquid. But it depends on the apple.
Mix everything using a spoon. Why not a whisk? Because apple pieces tend to get stuck in the middle, so they have to be shaken out. So, let it be just a spoon.
Before starting to fry the pancakes, heat the pan. Add some melted butter and pour a large tablespoon of batter with apples onto the pan. In this way, form several pancakes.
Fry for one to two minutes until golden brown on one side, then flip to the other side. Lower the heat, cover with a lid, and fry the pancakes for another 2-3 minutes until they rise nicely, stabilize, and are cooked through. Do not leave the batter for later, as the leavening agent will lose its power and the pancakes will not rise well. For each new batch, add a little melted butter. Of course, you can also fry them on a pan with a special non-stick coating, completely without oil, but then you will lose the attractive patterns on the surface of the pancakes, as well as the crispy edges. The choice is yours.
