Prepare the necessary ingredients for making pancakes with apples and zucchini using the kefir recipe. What kind of zucchini to use? It can be any variety. I often use regular zucchini, zucchini yellow, and there's another sort that I can't remember. It's preferable to use young vegetables with a tender skin and without seeds inside. Of course, using ripe fruits is also an option. In this case, you need to peel and remove the seeds, using only the flesh for cooking. The taste of the finished dish depends on the variety of apples. If using sweet apples, you can reduce the amount of sugar. If the apples are sour, then the opposite. Any fat content kefir will work. Even if the product has soured in the refrigerator, it will be perfect for our dish. Instead of kefir, if you don't have it, you can use buttermilk, sour cream, drinking yogurt, or liquid sour cream. In this case, the structure of the pancakes may vary slightly depending on the fermented milk product used. Sift the flour before using. You can replace it with rye, oat, or buckwheat flour. You can reduce the amount of flour, then the pancakes will be more tender, but it will be harder to flip them when frying. However, they will be very soft, fluffy, and have a more pronounced apple flavor. I haven't baked these pancakes in the oven, but why not give it a try. Wash the zucchini. Pat dry with a paper towel to remove excess moisture. Trim the ends on both sides. Grate the zucchini using a coarse grater. It's okay to use a grater with medium-sized teeth. Transfer the grated zucchini into a deep mixing bowl for kneading the dough.
Wash and dry the apple. Peel it. Cut it in half and remove the core and seeds. Grate it on the same grater. Another option is to finely dice the apple, so that apple pieces will be felt in the finished dish. Add the grated apple to the dish with zucchini.
Beat the egg. Mix it.
Pour in the kefir. Mix it.
Add salt, vanilla sugar, and regular sugar to make the pancakes with apples and zucchinis delicious according to the recipe on kefir. Mix it.
Add the prepared flour and baking powder. Mix it. Let the dough rest for 5-7 minutes on the kitchen counter. The dough will be quite thick.
Prepare a skillet with a non-stick coating or a well-tested dish. Pour in the oil, adjusting the amount to your taste. Heat it well. Spoon out portions of zucchini batter and shape them into round pieces. Cover with a lid and cook for 3-4 minutes on medium-low heat on each side until golden brown.
Place on a paper towel to absorb excess oil.
