Dietary recipe "Millefeuille"
The traditional millefeuille consists of puff pastry, custard cream, and fruit or berry filling. Puff pastry and custard cream are high in calories, so for a dietary version of this dessert, I suggest replacing them with light and airy crackers and a cream made from thick yogurt, respectively. Choose any fruits and berries according to your taste or limit yourself to a specific list considering their calorie content... This version of millefeuille is not only low in calories but also easy to make.

Directions
To make the base of the cream thicker, strain a portion of yogurt in cheesecloth for about half an hour or longer, depending on the desired thickness. It is convenient to do this by tying the ends of the cheesecloth to the handle of a tall pot, such as a five-liter one. Do not discard the resulting whey, as it can be used to make Adyghe cheese, pancake batter, or bread. It can also be used for dishes that do not require heat treatment, such as okroshka or unique drinks and cocktails.
Add honey, natural syrup (such as agave), or other sweet syrups of your choice to the thick yogurt.
Mix the cream with diced fresh fruits of your choice. This can include apples, pears, peaches, kiwis, bananas, etc. You can also add fresh berries when they are in season.
Crispbreads are considered a high-calorie product, but they are light and can be eaten in small amounts at once. On the photo, a package of 16 pieces weighs only 80 grams, so one crispbread is only 5 grams, which is much lighter and less calorie than classic mille-feuille pastry.
Spread yogurt cream with fruits on two crispbreads, either by mixing them together like in the shown version, or by layering the cream and fruits separately. For a more visually appealing presentation, you can use a pastry bag with a decorative nozzle to apply the cream.
Layer the cream-coated crispbreads on top of each other and cover them with a third crispbread. The diet version of mille-feuille dessert is ready, but you can improvise and make the serving more impressive. If you know how and have time, you can use a thick yogurt cream and a pastry bag to create patterns on the surface of the third crispbread. You can also lightly dust the surface of the crispbread with powdered sugar, using a stencil to create a design. Another simple way to decorate this dessert is to simply place fruit slices on the top crispbread.
