Not only the petals of the tea rose, but also those of the ordinary rose hip are used in cooking. They are less fragrant, but no less beneficial. The flowering period of tea roses is unfortunately very short, so sometimes it is difficult to gather the required amount of rose petals at once. In that case, the collected petals should be placed in a bag, tightly tied, and stored in the refrigerator. There they can safely stay for a day or two. To preserve as much aroma as possible, the petals should be collected in the morning when the dew settles. To prepare rose petals with honey for tea, you need to pick the petals from the roses, separate them, removing the sepals. Place the petals on a sieve and shake them well to remove small debris and pollen. It should be noted that flowers can only be gathered in places far from the road. For this recipe, we do not wash the petals to avoid moisture getting into the honey.
Put some petals in a bowl, pour honey over them. Use a wooden spoon to gently crush and rub the petals in the honey. They should reduce in size.
Add another handful of petals and mix thoroughly with the main mixture. In this way, gradually add all the petals and crush them in honey.
Prepare the storage jar in advance: rinse with boiling water and allow to dry completely. It is important that it is completely dry. Transfer our honey mixture to the jar. Pour honey on top with a spoon to avoid protruding petals. Store in the refrigerator.
To prepare rose honey tea, brew black or green tea. Pour it into a cup and add a spoonful of rose petals with honey for tea, stir and let it steep for a minute. If you do not want the petals to float in the tea (although it is so beautiful!), strain the tea through a fine sieve. The refreshing and aromatic drink is ready.
