Directions
Prepare all the ingredients. Wash the potatoes well. Take the green peas out of the freezer. While we deal with the potatoes, the peas will thaw a little. It is better to use frozen green peas, as it is more vibrant and nutritious, unlike canned peas, and almost as fresh in taste. The proportions of potatoes and peas are not essential. You can add more peas or potatoes, changing the taste in one direction or another. Wash and dry the greens. You can use any greens you like (parsley, dill, green onions). Try making this mashed potatoes with mint, it pairs very well with legumes and gives such dishes interesting spicy flavor nuances. I really like this mashed potatoes with thyme, and I used it. If you want to make this dish fasting, replace the butter with vegetable oil.
Peel the potatoes, cut them into random pieces, and boil until half-cooked (about 10 minutes). It's better not to add salt to the water while cooking.
Add green peas and herbs to the pot with potatoes. It is better to chop large leaves and stems (only the soft parts). Cook until the vegetables are done.
Drain the water from the cooked vegetables, leaving a little for the puree. Mash the potatoes with peas using a press or a masher, gradually adding water from the potato cooking. Bring the puree to the desired consistency. The mashed potatoes will have small pieces of peas.
Add butter to the puree, season with salt and pepper to taste.
The mashed potatoes with green peas is ready! Serve it hot as a side dish with meat or fish, with meat or vegetable patties, or as a standalone dish with a piece of melted butter. Enjoy your meal!
