Lagman in a multicooker

Lagman in a multicooker

Recently, I discovered this very delicious dish. It can be served as a soup or as a main course. It contains a lot of vegetables, meat, and a special type of noodles. The vegetables make the lagman very colorful, fragrant, and juicy, while the meat and noodles make it filling. I cook lagman in a multicooker. Thanks to this helper, cooking is a pleasure. You don't have to stand by the stove for a long time. However, since different models of multicookers have their own features, take into account the peculiarities of your own equipment.

Prepare all the necessary ingredients and the multicooker for a delicious lagman. In the classic version, lamb is used for the meat, but I will be using fatty pork. You can also use beef, turkey meat, or chicken fillet. Homemade noodles for lagman are made by stretching long strands of dough with a diameter of 3-4 mm. This takes a lot of time. It's good that you can now buy such noodles in supermarkets for any taste. This reduces the cooking time. You can use any seasonal vegetables, as long as they harmonize with each other. Use ripe and tasty tomatoes. The variety and color of the tomatoes do not matter much. Instead of tomatoes, you can use chopped tomatoes or tomato juice. Tomato paste or sauce is also a great option in cold weather. Use any variety of bell pepper, but make sure it is fleshy, as its color does not matter.

Rinse the tomatoes. Make a shallow cross-shaped incision on top. Lower them in boiling water for 30-40 seconds. Then remove the tomatoes from the boiling water and transfer them to cold water. Thanks to this step, it's very easy to remove the skin from the tomatoes.

Thoroughly wash and dry the meat with a paper towel to remove excess moisture. Cut it into medium-sized pieces for easy skewering. In the bowl of a multicooker, pour half of the specified amount of vegetable oil. Turn on the Sauté program. If it's not available, you can use the Bake program. Let the oil heat up for 1-2 minutes. Add the pieces of meat. Sauté for 3-4 minutes, stirring with a silicone spatula.

Pour water into the bowl. You can use cold or hot water. Instead of water, you can use meat, mushroom, or vegetable broth. Cover tightly with a lid and start the Stew/Meat program for 30 minutes. Since I have a quite powerful multicooker with a pressure cooker function, this time will be enough for the meat to cook. Adjust the time according to your multicooker.

Transfer the stewed meat together with the broth to a separate saucepan. Peel, rinse, and dry the onions and carrots. Chop the onions into thin slices and the carrots into semi-circles of medium thickness. I used a shaped knife for slicing. Pour the second half of the oil into the bowl. Turn on the Sauté program. After a couple of minutes (when the oil has heated up), add the onions and carrots. Sauté for 2-3 minutes, stirring.

Pour stewed meat together with broth into the multicooker bowl. Stir and taste. If the tomatoes are slightly sour, you can add a little sugar. Cover with a lid. Select the Stew/Vegetable program for 10 minutes. Since the meat is already cooked, this time will be sufficient for readiness.

Pour water into the bowl of a multicooker. For every 100g of noodles, use 1 liter of water. Add a pinch of salt. My assistant has a Multipovar program, where dishes can be cooked without pressure. Bring the water to a boil. Add the noodles to the boiling water. Stir. Bring it to a boil again. Cook for 1 minute. Turn off the program. Cover with a lid and let it sit for 7-8 minutes until the noodles are cooked. The cooking time for the noodles is indicated on the package.
