Garlic Soup with Smoked Bacon and Vegetables
It's time to cure autumn blues. I suggest preparing a very aromatic garlic soup with smoked bacon and autumn vegetables. You can vary the ratio of vegetables in this recipe according to your taste. It's best to prepare and serve the soup fresh and hot with homemade croutons.

Directions
To make garlic soup with smoked pork belly and vegetables, take sunflower oil, garlic, smoked pork belly, celery root, broccoli, Chinese cabbage, sweet pepper, vegetable broth, spices (salt, ground black pepper), and herbs.
Peel the garlic cloves, wash and dry them. Cut them into small cubes. Cut the smoked bacon into small pieces. Add sunflower oil, minced garlic, smoked bacon to a saucepan. Fry over low heat, stirring constantly for 2-3 minutes.
Peel the celery root. Rinse and cut into small pieces. The smaller the celery root is cut, the faster it will cook. Add to the garlic mixture. Cook over low heat for 1-2 minutes.
Pour vegetable broth into the saucepan. It can be made from potatoes or any vegetables. Stir and bring to a boil. Cover with a lid and cook until the celery root becomes tender. It will take approximately 10-15 minutes.
Rinse the broccoli and sweet pepper. Divide the broccoli into florets. Remove the seeds and stems from the sweet pepper. Rinse the vegetables in cold running water. Cut the sweet pepper into small pieces. Add the cabbage florets and bell pepper to the saucepan. Cook for about 5-7 minutes.
Thinly slice the Chinese cabbage into julienne and add it to the other ingredients. Stir and cook until all the vegetables become tender. I don't cook for long, as I like the vegetables to be slightly cooked.
Add your favorite chopped herbs. Season with spices and bring to a boil. Simmer for 1 minute and turn off the heat. Garlic soup with smoked bacon and vegetables is ready.
