Festive Duck in Sleeve
New Year is the best time to prepare duck! Today we have a very festive recipe for duck combined with prunes and sour apple. If the chimes are close and the duck is not yet in the oven, bake it in a special sleeve - cooking time will be reduced by half! Below, I will also tell you how to prepare this dish in advance, and on the 31st, simply put it in the oven.

Directions
Prepare all the ingredients. Rinse the duck and remove excess skin (on the neck) and feathers. Rinse prunes and apples.
Prepare the marinade. To do this, mix salt, minced garlic, honey, vegetable oil.
Coat the duck with the marinade. This recipe is good because you can coat the duck with the marinade the day before or overnight: the longer it marinates, the more delicious the duck will be. Put it in the refrigerator.
Remove the cores from the apples, cut them into 4 pieces, sprinkle with lemon juice and mix with prunes, and season with salt.
Place apples and prunes inside the duck and sew it up, or simply connect them with toothpicks. This step can also be done in advance. That is, you can stuff the duck with marinade and forget about it for a day (or night).
Peel the potatoes, cut them into wedges, season with salt, pepper, and your favorite spices. I like to use rosemary. How to prepare in advance: simply peel and cut the potatoes the day before, but be sure to put them in a pot with cold water and refrigerate. Before baking, simply season with salt and spices.
After the marinating time is up, place the potatoes in a sleeve, place the duck on top, and bake in the oven for 1.5-2 hours (depending on the weight of your duck) at a temperature of 190 degrees Celsius. To make the duck crispy, make a hole in the bag 15 minutes before the cooking time by piercing it with a sharp knife or cutting with scissors, and brown it. To prevent the extremities from burning, I recommend wrapping them in foil around the middle of the baking time.
