Pork tenderloin with nut oil

Directions
Starting the preparation of pork tenderloin with nut oil should begin with preparing the meat. Clean the pork tenderloin from films and excess fat. Place the meat in a container, pour milk over it, and add lemon juice. Leave the meat in the marinade at room temperature for 10 minutes - during this time, the milk will curdle. Close the container with a lid and refrigerate. The meat should marinate for at least 8 hours, preferably longer, to become incredibly tender.
To make walnut oil, roast the nuts on a dry skillet for 5 minutes. Transfer the hazelnuts onto a paper towel and rub them well to remove the skin.
Transfer the nuts to a blender bowl and grind them into crumbs. It's better not to grind them too finely, so that there are small pieces of nuts in the finished oil. Transfer the nuts to a bowl and add a pack of softened butter. Mix the nuts well with the butter.
Place the resulting nut and butter mixture on a sheet of foil or plastic wrap and tightly wrap it. Put it in the refrigerator for 2 hours. You can prepare 2-3 portions of this oil at once, it stores perfectly in the freezer or refrigerator.
Preheat the oven to 200 degrees. Take the pork tenderloin out of the marinade and pat it dry with paper towels. Do not discard the marinade, but save it. Season the meat with salt and pepper. Heat a skillet with oil and fry the tenderloin on high heat until golden brown on all sides. Transfer it to a suitable baking dish.
Peel the onion and garlic. Chop the onion into small pieces and slice the garlic thinly. In the same skillet where the meat was fried, fry the onion and garlic until golden brown. If necessary, you can add 1 tablespoon of oil to the skillet.
Pour the saved marinade into a skillet and simmer the mixture over low heat for 7-10 minutes. Season with a pinch of salt and pepper. Pour the marinade over the meat in a baking dish and place it in a preheated oven. Immediately reduce the temperature to 180 degrees Celsius and cook the meat for 1 hour. Remove the cooked pork tenderloin from the oven, cover with foil, and let it rest for 10 minutes. Then, slice it into individual portions and serve with walnut oil and a side dish of your choice.
You can prepare the pork tenderloin with walnut oil in advance, a day before the celebration. After cooking, let the meat cool completely and store it in the refrigerator. Reheat it just before serving. Alternatively, you can serve the meat as a cold appetizer. The pork tenderloin with walnut oil is ready. Enjoy your meal!
