During the hot season, all markets and supermarkets are filled with fragrant, juicy, bright berries. Of course, we should take advantage of this. And how can we not bake berry cakes in the summer? One of my favorites is a sand cake with blueberries, and I bake it in a multicooker so as not to heat up the kitchen even more with an oven in warm weather. A cake with a crumbly base made of sand dough and a sweet and sour filling of cottage cheese and blueberries is very delicious. The cottage cheese part is sweeter, while the blueberries add a touch of acidity. Be sure to try it.

The shortbread dough will be prepared with butter. The taste of the finished pastry depends on the quality of the butter. Choose good quality butter with a fat content of 82.5%. Keep the butter in the freezer until it is very solid before kneading the dough.

The amount of flour added during the dough kneading process may depend on the fat content of the sour cream. The thicker the sour cream, the less flour the dough will take.

Cottage cheese of any fat content will be suitable for the filling. It can be grainy or pasty. The amount of condensed milk to add depends on your taste. It all depends on the level of sweetness you want for the filling.

Blueberries can be fresh or frozen. There is no need to thaw the berries beforehand. Just coat them in flour right before adding them to the filling.
