Blueberry dumplings

Blueberry dumplings are the pleasure that summer brings us. It is an amazingly delicious dish made from a minimal set of ingredients. And if you make dumplings with the whole family, the process can turn into a wonderful family pastime.

Directions
First, let's make the dough for the dumplings with blueberries. To knead the dough, we need ice water, so put a glass of water in the refrigerator or freezer beforehand. Sift the flour into a deep bowl, it will become more airy due to the oxygen, and you can be sure that there is nothing foreign in the dough. Add a pinch of salt to the flour and mix it well.
Beat an egg into flour. To make the stirring process easier, you can beat the egg with a whisk first. Slightly mix the egg with the flour.
Now you can add water, while thoroughly kneading the dough. The dough should be homogeneous, soft, and not stick to your hands.
Wrap the dough for dumplings in plastic wrap and refrigerate for half an hour.
Meanwhile, you can prepare the filling for the dumplings. Sort the blueberries, remove leaves and any debris, wash, and dry. In a bowl, mix the blueberries with starch and sugar. In my opinion, adding starch is necessary so that the filling does not leak out of the dumplings, and the dumplings will maintain their shape when cooked.
Roll out the dough thinly with a rolling pin, sprinkling a little flour on the surface so that the dough does not stick to the table.
Cut out circles of desired size using a glass.
Place approximately 1 teaspoon of filling in the center of each circle. Be careful not to overfill, as there is a high chance the dumplings will break apart while cooking.
Fold the circle in half and seal the edges by pressing the two ends together with your fingers. Make sure there are no gaps or openings. The quality of the dumplings depends on how well they are sealed, as they may burst open during cooking and the filling will escape, resulting in a less enjoyable eating experience. Use your index and middle fingers to make a twist at the edge of the dumpling, creating a braid-like pattern that adds a unique touch to the dumplings.
Bring a pot of salted water to a boil. Add the blueberry dumplings and cook for about 5 minutes after they float to the surface. Remove the cooked dumplings with a slotted spoon. Serve with butter or sour cream. You can also make a sauce by combining sour cream, sugar, and poppy seeds in a mixer bowl. Beat until well combined and add vanilla extract. Drizzle the sauce over the cooked dumplings when serving.
