They are suitable for people who follow a diet and those who adhere to proper nutrition. Zucchini according to this recipe can be cooked on a grill pan or on a regular frying pan. Both ways will be tasty. And the most important thing is that such zucchini can be prepared simply and quickly in any kitchen.

Prepare all the necessary ingredients for the most delicious zucchini recipe in a skillet. Choose young zucchinis of small size, the smaller the better. The vegetable should not exceed 200-250 grams. For this recipe, I will cut the zucchinis into thin slices that should fit in the length of the skillet. Pay attention to the stem of the zucchinis, it should be fresh and juicy. This means that the vegetable was recently picked and is fresh. The thinner the skin of the zucchinis, the tenderer the flesh will be. For the sauce, you will need cold-pressed olive oil for its characteristic flavor. I will also add a mixture of Italian herbs, but a mixture of French, Provençal, or Caucasian herbs will also work. And if you have fresh thyme at home, you can add its tender sprigs to the sauce. It is better to use hard cheeses such as Parmesan or Cheddar. You will need a very small amount - 30-50 grams.
Rinse the zucchinis under running water, trim the stems. If there are any defects, dents, or scratches on the vegetable skin, it is better to remove them with a vegetable peeler or a knife.
Slice the zucchinis into slices with a thickness of 0.7-1 cm. It is desirable for all slices to have the same thickness.
Mix olive oil with 2 pinches of salt, a mixture of freshly ground pepper (0.25 tsp), and 1 tsp of Italian herbs.
Crush the garlic using a press and add 1 clove to the olive oil-based sauce. If you like a strong garlic flavor, you can add 2 cloves of garlic. I used fresh garlic, it has a rich flavor compared to winter garlic, so I added 1.5 cloves of garlic.
Preheat a frying pan with a thick bottom and non-stick coating. Grease the surface with vegetable oil, just 2-3 drops. It is better to use a brush to evenly distribute the oil over the surface of the pan. Do not pour too much oil, the zucchini should fry almost without it. And in the end, olive oil sauce will be added.
Place the zucchini slices on a hot frying pan. Fry over medium heat for 2-2.5 minutes until golden brown.
Turn the zucchini slices over and fry the other side until cooked. If the fire is too high and the zucchini is burning, reduce the heat and let the pan cool slightly.
