This salad is quite filling thanks to the potatoes, and refreshing thanks to the cucumber. Kids will definitely love it. The taste is simple and understandable, and the ingredients are easily accessible and often at hand.

To prepare potato salad with cucumbers like in kindergarten, you will need 500 grams of potatoes - three medium-sized tubers, approximately half a small cucumber, 20 grams of vegetable oil - about three tablespoons, and 50 grams of green onions (I would reduce the amount for children slightly).
Boil the potatoes in their jackets until cooked. The cooking time depends on the size of the potato: if it's medium-sized, it will take about 25 minutes. Let the potatoes cool slightly and then peel them, removing any dark spots or damage. Allow the potatoes to cool completely.
Cut the peeled and cooled potatoes into small cubes. Do the same with the cucumber and green onion.
In a bowl, combine the diced potatoes and cucumber. Pour the vegetable oil evenly over the mixture and mix well. Leave the green onion aside for serving, as it will be sprinkled on each portion separately.
When serving, generously sprinkle the salad with finely chopped green onion. According to the recipe, salt is not added to the salad, but I still added a little. 50 grams of green onion is quite a lot for the rest of the ingredients, but if your child likes onion, you can add the entire amount. The potato and cucumber salad, just like in kindergarten, is ready. Enjoy your meal!
