Peanut Sand Rings
These wonderful peanut sand rings are a perfect addition to tea, coffee, or milk - they are crumbly and crunchy. Many of us are familiar with them since school or college times. They are easy to make and you will have plenty of them!

Directions
Prepare the ingredients for making peanut sand rings.
In a mixing bowl, combine softened butter with powdered sugar and vanilla sugar. Beat the ingredients together with a whisk, mixer, or regular spatula until the mixture becomes homogeneous.
Lightly beat two small chicken eggs in a separate container, then gradually mix them into the butter mixture.
In a sieve, combine flour and baking powder, sift into the bowl with the butter and egg mixture.
Knead a uniform dough with fast movements. This dough can be used on the same day, or it can be frozen (in this case, flatten it into a square with a thickness of 2-3 cm, wrap it in several layers of plastic wrap, and store it in the freezer for 3 weeks).
Separate half of the dough from the total amount and roll it between two sheets of parchment paper or plastic wrap. The thickness should be 7-8 mm. Repeat the same process with the remaining dough. Stack the rolled sheets on top of each other and let them cool for at least 60 minutes or longer. The dough should become firm, this is important!
While the dough is cooling, chop the peanuts. You can slice them with a knife or crush them with a pestle/rolling pin. Do not turn the nuts into flour. From the cooled dough, cut out circles using a special cutter or any improvised tool (a garnish ring, a tartlet mold). The diameter of the circles can be 10 cm or more. Also, cut out a smaller circle in the center of each circle to create a ring shape. Set aside any excess dough, gather it together, roll it out to the desired thickness, refrigerate again until hardened, and reuse.
Brush the surface of the rings with beaten egg.
Transfer the chopped peanuts to a deep and wide dish and dip the brushed ring into it. Repeat this process with all the rings until the dough and peanuts are finished.
Transfer the rings to a baking sheet lined with parchment paper.
Bake the peanut butter sand rings at a temperature of 175 C for 13-15 minutes (the given time is just an estimation, as all ovens work differently). The ready peanut butter sand rings should be golden brown on all sides.
