Fluffy Kefir Mannik

Fluffy semolina cake with kefir

Mannik is an old-fashioned, fluffy cake made with semolina and kefir. It is familiar and beloved by many since childhood, light and very soft. This mannika by this recipe is good on its own, but I often use it as a base for other desserts. Try adding apples, pears, juicy berries to the dough or covering the finished cake with chocolate glaze. This way, you can turn the usual mannika into a festive cake.

Whip the whites with a mixer together with sugar and salt until it forms airy, white, and dense mass. It is very important that the dish and whisk used to beat the whites are clean and dry. Even the smallest drop of fat or water can prevent the whites from reaching the desired consistency.

Carefully and slowly, in three or four portions, add the protein mass to the semolina dough. Each time, mix the mass well to evenly distribute the proteins. But it is very important not to rush, otherwise the proteins will settle under the heavy consistency of the semolina-based dough, and the baking will not turn out as fluffy and airy as intended.

Remove the cooled semolina cake from the dish and parchment, slice it into pieces, and serve. If desired, you can coat it with chocolate glaze, powdered sugar, or any sweet sauce. This cake goes well with jam and fresh berries, as well as a scoop of ice cream. If you used fruits or berries in the baking, it is recommended to flip the cooled cake upside down. This way, your berries or fruits will be on top, which will not only decorate its appearance but also add a special touch to the taste. The fluffy kefir semolina cake is ready. Enjoy your meal!
