Directions
Prepare all the ingredients listed. You can use any jam of your choice, just make sure it is thick. Add spices according to your taste. If you don't like cinnamon, ginger, or nutmeg, simply don't add them. You can use a little vanilla powder for aroma. There is no need to replace butter with margarine.
Grind the walnuts in a blender until fine crumbs. Peanut or other nuts work great as a substitute. There is no need to roast them.
Sift the flour into a deep bowl. Add cinnamon, nutmeg, ground ginger. Mix with a hand whisk until evenly distributed.
Wash the eggs with warm water and dry them with a towel. Carefully separate the yolks from the whites. Beat the whites lightly with a fork.
Take the butter out of the refrigerator beforehand and let it soften at room temperature. Transfer it to a deep container and add granulated sugar. Take a mixer and beat until fluffy consistency.
Add the yolks and salt. Continue beating with a mixer until homogeneous consistency.
Gradually add the flour mixture with a spoon. After each addition, beat with a mixer.
To start, you need to create a thick dough mixture that does not stick to your hands and is easy to shape.
Using a spoon, take a portion of the dough and roll it into a ball the size of a walnut. Dip it first in egg white, then roll it in crushed nuts. Repeat this process with the rest of the dough, making about 17-20 balls.
Prepare a baking sheet in advance by lining it with parchment paper. Place the rolled balls on the sheet, leaving some space between them. Use the cork from a plastic bottle to create indentations in the center for the filling. Bake in a preheated oven at 180 degrees Celsius for 15-20 minutes. Adjust the baking time according to your oven.
Once the cookies are done baking, let them cool to room temperature.
Fill the indentations in the cookies with a thick jam, preserves, or fruit spread.
If desired, sprinkle with powdered sugar. Christmas nut cookies are ready. Store in a tightly closed tin or glass container for no more than one week.
