Cherry Pincher Cake

"Pincher" cake with cherry

This is my family's favorite cake, very moist and tender, it disappears from the table instantly. I have always been skeptical about baking recipes with mayonnaise, but it gives a wonderful tenderness to the crust, so I do not recommend replacing it with anything else. Try making the Cherry Pincher Cake, and it will become your favorite.

Meanwhile, prepare the cherries. You can use cherries in syrup (drain the syrup) or frozen berries, like I did. In that case, remove the cherry pits if they are present (you will need approximately 2 cups of cherries), place the berries in a saucepan, add sugar to taste, and bring it to a boil. Let it simmer for about 2-3 minutes. Allow it to cool and drain the syrup without discarding it.
