For such cube pancakes with banana, you can take cottage cheese from the countryside or buy it in a package. The more moist the cottage cheese, the more flour you will need. If the cottage cheese from the countryside is dense enough, it needs to be crushed through a sieve. Add an egg to the cottage cheese.
Using a potato masher, mix the cottage cheese and one medium egg in a bowl.
Add sifted rice flour to the cottage cheese mixture. Do not add too much flour at once, otherwise the pancakes may become too dense. Instead of rice flour, you can take white wheat flour, but you should take it 1 tablespoon less than rice flour.
Peel and cut a ripe banana into large pieces.
Take a piece of cottage cheese dough, shape it into a ball, flatten it into a thick circle, and place a piece of banana in the center of the dough.
Fold the edges of the cottage cheese dough so that the banana ends up in the middle, and shape the cottage cheese square with your hands. If the dough sticks to your hands and it's difficult to shape the product, then moisten your hands with vegetable oil.
Heat vegetable oil in a pan and fry the cottage cheese pancakes on all sides until golden brown. Do not cover the pan with a lid.
