Prepare all the necessary ingredients for mozzarella canapes for New Year 2023 on skewers. To calculate the necessary amount of canapes, you need to know how many guests will be at your festive table. One mini mozzarella ball weighs approximately 12 grams, and Cherry tomatoes come in different sizes, from the smallest weighing 8 grams to fairly large ones up to 30 grams. It all depends on the variety of tomatoes. When I bought Cherry tomatoes, I chose them by freshness and firmness. And, as it turned out, they are slightly larger than mozzarella balls. But I didn't cut them so that they wouldn't lose their juiciness. Therefore, the weight of one tomato is approximately 18 grams. So, the weight of a canape on a skewer is 30 grams. Plus, 0.5-1 gram is the weight of basil leaves. Based on the number of dishes on the festive table, you can calculate 60-90 grams of canapes per guest. That means 2 or 3 pieces per person. If you have figured this out, you can move on to the cooking process.

Thread a large basil leaf on the skewer, then a cherry tomato, whole or half. Then thread a medium basil leaf, followed by a mini mozzarella ball. Finally, thread a small basil leaf at the tip of the skewer. This will create a very beautiful canapé shape that decreases in size.

The storage stage for mozzarella canapés for New Year 2023 on skewers. The canapés are prepared very quickly, and it is best to make them just before serving. But if this is not possible, then fold the prepared mozzarella canapés into a container with a lid and store in the refrigerator for up to 5 hours. Mozzarella is a brined cheese and cannot be stored for too long without liquid. The same goes for basil. The second storage option suits us better: prepare the tomatoes, leave the mozzarella in the brine, buy fresh basil, and prepare the skewers for the canapés. All of this can be done until December 31st. Before serving, you just need to thread all the ingredients onto the skewers. This will take up to 5 minutes of your time.

Mix salt, olive oil, and Italian herb blend for dressing the canapés. I use coarse sea salt, small grains that add even more flavor to this Italian dish. This process takes less than 1 minute, and it can also be done just before serving the canapés. Alternatively, you can do it in advance as the oil stores well with the herbs and salt.
