Beautiful Pie with Meat Without Yeast
I make this beautiful yeast-free meat pie for both holidays and simple home tea parties. Bright and filling, it is made with kefir and butter, resulting in a very soft dough. The taste of the filling will depend on the chosen minced meat. This time, I am using a mixture of pork and chicken. It's one of my favorite variations.

Directions
Prepare the necessary ingredients for a beautiful yeast-free meat pie. You will need high-quality wheat flour. If desired, you can replace some of the wheat flour with rye or whole grain flour. The fat content of the kefir does not matter, so you can use kefir of any fat content, even low-fat. However, it is preferable to use good quality butter for a delightful taste of the dough. The butter should be well frozen, straight from the freezer. For the filling, any minced meat or mixture will do. I used a combination of pork and chicken fillet. Choose any variety and color of sweet peppers. You can use any herbs according to your taste: dill, parsley, celery, green onion.
Select a deep container for kneading the dough. Sift the flour and baking powder into a sieve. Sift it. You can repeat the sifting process 2-3 times to ensure that the flour is well aerated and the baked goods turn out more airy.
Add sugar and salt to the sifted flour. Mix well.
Take the butter out of the freezer. Grate it using a coarse grater, ensuring that each piece of butter is coated with flour. Alternatively, you can dice it on a cutting board into small pieces and add it to the flour.
Using quick motions with your hands to prevent the butter from melting, rub the flour and butter together until it resembles fine crumbs.
Pour cold kefir into the butter-flour crumb. Stir with a spoon until all the ingredients become moist.
Quickly knead the dough by hand, forming it into a ball. Cover with plastic wrap and refrigerate for 30 minutes to make the dough more compact.
Wash and dry the meat with a paper towel. Cut into small pieces and pass through a meat grinder. You can also use pre-made good quality minced meat. Transfer to a deep bowl.
Peel, rinse, and dry the onion. Cut into small cubes. Add to the minced meat and mix well.
Remove the seeds from the bell pepper. Rinse and dry. Cut into small pieces. Add to the filling and mix well.
Rinse and pat dry the herbs. Finely chop them and add to the minced meat. Season with salt and pepper and sprinkle with oregano. Mix the filling well.
Take the chilled dough out of the refrigerator. Take a sheet of parchment paper and sprinkle it with a small amount of flour. Place a ball of dough in the center. Roll it out into a thin layer with a diameter of about 40 cm. The thickness of the layer should be 5-6 mm.
Trim and level the excess dough around the circle to match the size of the baking sheet. In my case, the diameter of the circle is approximately 35-37 cm.
Make small cuts all around the diameter.
Fold the cut strip underneath, pinching the edges to give it a pouch shape.
Perform these steps with all the stripes.
Pre-wash and dry small tomatoes in advance. I needed 16 pieces. Put a tomato in each pouch.
Grease the pouches with beaten egg.
Place the meat filling in the center. Level with a spoon.
I decorate this meat pie without yeast to make it even more attractive. To decorate, roll out the dough into a thin layer and cut out desired figures with a mold, I have flowers.
Place the cut figures on top of the blank in a chaotic order. Brush with beaten egg.
Decorate with sesame and kalindzhi seeds, you can use black sesame seeds. Preheat the oven to 180 degrees. Put the meat pie in the oven to bake for 50-60 minutes. Baking time depends on the power of your equipment and the size of the pie. Use your equipment as a guide when baking.
Let the pie cool a little and serve it, cut into portioned pieces.
