Baked Whole Trout

River trout is a delicate and exquisite fish. It is often prepared whole, fried in a skillet or simmered in water with vinegar to achieve the so-called "blue" fish. However, there are times when supermarkets offer very large specimens that cannot fit in any skillet. What to do? Of course, bake the whole trout in the oven! You can bake the fish in parchment or foil, or you can do it on a bed of vegetables and herbs, just like I did.

Directions
The choice of vegetables and herbs depends on your personal taste and preferences. I used what was growing in my garden at the moment. I had green onions with small tasty bulbs, young green garlic with flavorful shoots, and of course, plenty of dill and parsley. I also had a couple of carrots, which I included as well. I sliced the carrots into thin strips. If you have small and young carrots, simply cut them in half. I arranged the herbs and garlic shoots on the baking sheet along with the carrots. They will serve as a fragrant bed for the fish. The dill and parsley will flavor the inside of the trout and give it an incomparable aroma.
You can line the baking sheet with parchment paper, although I forgot to do that. Place the carrot strips, halved young onions with their greens, and garlic shoots on the baking sheet. Season the vegetables with salt and pepper, and drizzle them with olive oil.
The trout fillets I used were already cleaned, so I just rinsed and dried them. I seasoned one side with salt and pepper and placed them on top of the vegetables with the seasoned side down. I seasoned the inside of the fish with salt and pepper, and filled the cavities with sprigs of dill and parsley. I seasoned the top of the fish, and lightly drizzled it with oil. Then, I placed it in a preheated oven at 190 degrees Celsius. Bake for approximately 20 minutes. To check if the trout is cooked, you can insert a skewer or thin knife into the thickest part of the fish, it should easily go through. The whole baked trout is best served with vegetables of your choice.
