Cook for 40-55 minutes, depending on the desired degree of doneness. The doneness of the meat is a rather delicate matter, the easiest way to determine it is to measure the temperature in the middle of the piece using a meat thermometer (for medium well, the meat should be cooked to a temperature of 65-69 degrees). Before slicing the meat, let it rest on a warmed plate or cutting board covered with foil, for 15 minutes. This time will allow the juices to distribute inside the meat and not leak out when sliced.
