Dust the surface of the sponge with flour, cover the bowl with a lid, and leave in a warm place for three hours. The temperature should not exceed 30?C. A thick sponge ferments for 3.5 hours and increases in volume by 1.5-2 times, a liquid one (with 100% water) ferments for 1.5 hours and increases in volume by 2 times.
