A bun like in kindergarten
Do you know any child who would refuse to indulge in 'plushkami'?! No? Neither do I! For some reason, baked goods in preschool age seem especially delicious. So let's put on our aprons and start cooking: let's bake 'Homemade' buns according to the kindergarten recipe.

So, in the kindergarten recipe book, there are several types of dough: flaky and plain with yeast and vegetable oil. The buns are made from flaky dough, which is prepared using the sponge dough method. What does it mean? Dissolve pressed yeast in a small amount of water, heat the rest of the water to 35-40?C, mix it with the yeast, add sifted flour (35-60%), and mix until smooth. Dust the surface of the sponge with flour, cover the bowl with a lid, and leave in a warm place for three hours. The temperature should not exceed 30?C. A thick sponge ferments for 3.5 hours and increases in volume by 1.5-2 times, a liquid one (with 100% water) ferments for 1.5 hours and increases in volume by 2 times. And the initial appearance of the buns is like this:
Dissolve salt and sugar in the remaining water, mix everything with the prepared sponge, then add the remaining flour. At the final stage of kneading, add vegetable oil and knead a soft, smooth dough. Its temperature should be 28-30?C. Cover the bowl with a clean cloth (lid) and let it ferment for 2 hours. During this time, the dough needs to be kneaded a couple of times to release carbon dioxide. This is important if you want to have a beautiful and fluffy texture in the baked goods. The dough before dividing it looks like this:
For the second kneading, divide the dough into portion pieces weighing approximately 55 grams. Roll the dough into homemade balls.
Generously grease a baking sheet with butter. Dip the prepared buns first in melted butter, then in sugar. Arrange them on the baking sheet with a distance of 8-10 cm and let them rest for 30-40 minutes.
The buns, having rested, are now closer to each other. According to technological requirements, the buns should be baked at a temperature of 230-240 degrees for 5 minutes. However, in home conditions, these parameters are slightly different. The temperature should be set lower and the baking time should be slightly increased. Cover the finished buns with a clean towel - they need to rest after being baked. In the kindergarten, the homemade bun is served with compote, milk, and other vitamin drinks for snack time.
