Twisted Lemon with Sugar

To start, you need to wash the lemons well, preferably with a brush, as they are sometimes waxed for shine, which we don't want to eat. We will be using the whole lemon, including the peel. I only cut off the stems.
So, if you have a meat grinder, it will be easiest to cut the lemons into quarters and process them in the grinder, gradually adding sugar to each piece. Now you can simply scald the jar with boiling water, put the lemons in it, seal it tightly, or eat it right away. If you don't have a meat grinder, you can either grate the lemons on a fine grater, or finely chop them with a special knife, or cut them into small pieces and puree them with a blender.
Now, in the scalded jar, layer the lemons and sugar, alternating between spoonfuls. You can simply mix all the sugar with the lemons in a salad bowl and then transfer to the jar.
It is very convenient to add such lemons to open pies, both fully lemon-flavored and with other fillings. I add the lemons to apple charlottes.
The last option is to preserve lemon slices with sugar. Using a regular knife, slice the entire lemon into circles or semicircles about 3 millimeters thick. Slices that are too thin will be difficult to pick out of the jar. Just like before, layer the slices in the jar, sprinkling each layer with sugar. These lemons are especially convenient for those who often drink tea with lemon – the slices are always ready, and the lemon never spoils or dries out. It is also convenient to have these slices during a cold. I always store all the preparations in the fridge. Enjoy your meal.
