Directions
Prepare the ingredients for preserving strawberries blended with sugar for winter without cooking. Choose delicious, healthy, and nitrate-free strawberries. Before starting the preparation process, make sure that all the utensils, tools, and surfaces that the strawberries will come into contact with are absolutely clean. I draw your attention to this because the shelf life of strawberry puree also depends on it.
Thoroughly rinse the strawberries and then soak them in water for a while to remove any remaining small particles of dirt. Then dry the berries on a paper towel.
Remove the stems with the fruit stalk. I use a knife or scissors for this. All the berries should be without the fruit stalk, as this is important.
Cut the strawberries in half. Although they are soft and will blend completely, I prefer to make cuts to make sure that the inside of the berry is not spoiled.
Place the sliced strawberries in a bowl in which you will blend them with an immersion blender or in the bowl of a stationary blender.
Blend the strawberries until smooth, but leave some small pieces for texture. You can add a little citrus juice or natural extracts like vanilla or mint to the strawberry puree. You can also add fresh herbs, such as basil, for added flavor.
Add sugar and continue blending the strawberries until the sugar is fully dissolved.
Transfer the strawberry puree into jars and seal them tightly to prevent oxidation. Make sure the jars are cleaned and sterilized. I prefer using small jars to minimize the storage time of the strawberry puree once opened. The lids should be boiled before sealing the jars. The color and smell of the strawberry should remain unchanged during storage.
The strawberry puree is ready to be stored without cooking. It can be kept in the refrigerator for up to six months. It pairs well with pancakes, desserts, or even a cup of tea. Enjoy!
