There are only two important components - the right duck and the right spices. It is not a problem to buy chilled Peking duck in large supermarkets, they are bred here and are inexpensive. They differ from usual domestic ducks by their thin skin with almost no subcutaneous fat and large meatiness. As for the spices, for the right taste, we need Wuxiang - a Chinese spicy blend of five spices. You can buy it ready-made or grind the spices yourself, which is what I did. Take one cinnamon stick, two star anise, three cloves, and a teaspoon of fennel seeds. You also need Sichuan pepper, which is unusually spicy and numbs the tongue. But if you cannot find this pepper, it is not the end of the world, we can do without it. Grind the spices in a mortar until uniform.
