How to freeze herbs

Many people would say that herbs are available all year round and that there is no point in stocking up on them, but I disagree with this statement. I have been in situations many times where I start cooking and then realize that my herbs have run out after checking the refrigerator. What do you do: cancel the planned dish for your family or drop everything and rush to the store? No, in such situations, all you need to do is open the freezer and take out the frozen herbs!

I suggest trying several ways to freeze herbs: a convenient method is to freeze herbal ice cubes, excellent cubes made from butter and herbs are used, and the simplest option is to freeze chopped herbs in a package. The recipe for freezing herbs into cubes is already available on the website, so I will focus more on the remaining methods. Before freezing the herbs, they need to be carefully sorted, removing any damaged or starting to spoil branches. And then wash them well. I usually wash the herbs under cold running water and then let them drain well, as it is important to get rid of excess moisture before the freezing process. Now you need to chop the herbs, I think it's best to do it the usual way: chop them as you usually do.

Although I chopped dill and parsley separately, I decided to freeze them together. You can confidently make your own green mixture, but I highly recommend freezing this combination - parsley + dill - because these two types of herbs are used in practically all Slavic dishes. So, in a clean polyethylene bag, I poured a small amount of dill and parsley, mixed them. I prefer to make these bags small, then it is very convenient to store the short and thin sausage in the freezer.

You need to carefully wrap the bag with herbs, place a necessary note-sticker inside, indicating what exactly we froze and when. Such sausage-like bags can be stored in the freezer. I intentionally did not specify the specific freezing date on the sticker, because, in my opinion, indicating the month is sufficient, as frozen herbs can be safely stored for about a year.

Now let's move on to the second freezing method. We need to mix the chopped herbs with butter. It is very easy to do this if you remember to take the butter out of the refrigerator in advance. The butter should soften enough to easily mix with the sliced dill and parsley.

Distribute the resulting oily and aromatic mixture into ice cube trays. However, I prefer to use not special forms, but trays from candy boxes the most. The cells there are of a convenient size, and most importantly - such inserts from candy boxes can be simply thrown away without the need to wash them afterwards. After all the trays are filled, they should be placed in the freezer. Several hours are enough for the herbs to freeze perfectly.

To freeze herbs, you can simply toss the desired amount of herbs from the package into the dish you are preparing without thawing them. Another option is to make herb-infused oil cubes, which can be used in sauces, soups, and stews.
