Directions
You can use both yellow and green string beans. Rinse fresh green beans and trim the ends.
Bring water to a boil in a pot and salt it well (approximately 1 tablespoon of salt per liter of water). Add green beans to the boiling water and cook for 3-4 minutes after it boils again. By the way, you can prepare this appetizer from frozen green beans, there is no need to thaw them, just put the beans into boiling water in their frozen state and cook for no more than 2 minutes after it boils. Drain the water and set the green beans aside on a strainer or remove them with a slotted spoon. If you are preparing the appetizer with green beans, it is preferable to put them in cold, or better yet, icy water so that they maintain their bright green color.
Whisk an egg with a pinch of salt.
In a separate bowl, mix breadcrumbs, cornmeal, and paprika.
Coat each green bean with the beaten egg.
Next, coat the green beans in the dry mixture.
Heat vegetable oil in a frying pan and fry the beans on all sides until golden brown. Be careful not to burn the breadcrumbs in the hot oil.
Place the cooked beans on a paper towel to absorb the excess oil.
It is best to serve breaded green beans while hot, when the breadcrumbs are nice and crispy. You can enhance the dish with a sour cream sauce with herbs or garlic sauce. If you want to reduce the calorie content of the dish and avoid frying the green beans in a frying pan, you can bake them in the oven. Place the breaded beans on parchment paper and bake in a preheated oven at 180 degrees Celsius for 15-20 minutes.
