I must say, I have never tried making it with any other cheese, only with hard varieties. In this recipe, I used leftover pieces of three cheeses. It is better to sift the flour to avoid any lumps. Take softened butter at room temperature. Grate the cheese finely. This time I had some chunks, so I put them in a blender and ground them into crumbs. Combine everything in a bowl.

I always roll it out directly on a baking sheet lined with parchment paper. Roll it thinly, the dough should be 2-3 millimeters thick, not thicker! Meanwhile, preheat the oven to 180 degrees Celsius. Transfer the dough to the baking sheet and cut it into portions. I use a pizza cutter for this. Now you can sprinkle them with a little salt on top, all over the surface. Despite the large amount of cheese, I find salt necessary. Place them in the oven for about 7-10 minutes (remember, the oven should be well preheated!). The cooking time depends on the thickness of the dough and the specific properties of your oven. The cheese crackers should become beautifully golden brown. You can sprinkle them with cumin, poppy seeds, sesame seeds, or any dried herbs - use whatever you like. Let them cool completely. Enjoy the crispy goodness! You won't be able to stop eating them! :)
